Homemade oven dried apples


Oven-Dried Apple Chips

So this week we had a little road trip planned and I asked my husband what he wanted for snacks, immediately he replied, "anything healthy." So I packed carrots, peppers, cheese, nuts, and I noticed 3 apples rolling around in our bottom fridge drawer so I pulled those out as well. Although I do love a crisp, juicy apple, I was craving something a little different. So I thought I would try my hand in making some dried apple chips. I know the preferred method in making dried apples is with a dehydrator but I don't have one so I turned to the oven.
When you slice your apples, try and slice them as thin as possible, this way they dry out quicker and they are a lot more "chip like" if they are thin. A few of my slices were a little thicker and those turned out a little more soft than I how I prefer them but they were just as tasty.

Lay them all out on a cookie sheet. I sprayed my cookie sheet lightly with some non-stick spray, I'm really not sure if this was necessary but afterword the cookie sheet came clean really easy so I'm glad I did. 
Then I mixed some cinnamon and sugar together to sprinkle on top. This is totally optional, the apples really don't need anything added to them, I think next time I'll do half with no sugar and half with. Next, set your oven to 200 degrees and let them bake. I checked on them after 2 hours and turned them all over. Then I checked on them again after another 2 hours. After that I couldn't help but checkin on them every 30 minutes till they were baked to my liking. 
Pull them out and enjoy!!! They are such a yummy treat, and next time I'll cut up a lot more apples, these things disappear way too fast!

 

 
This recipe is as easy as they come 
you know now a days they have so many different flavors of Oreos so these can appeal to many people 

I used the Mint and the Berry Burst Ice Cream

Oreo flavors 

Regular
Double stuffed
Chocolate Crème  
Mint 
Peanut butter 
Peppermint
Golden
Strawberry milkshake 
Berry burst Ice Cream
Fudge Sunday
Double Delights 
Holiday limited editions 
(Holiday Colors)

Ingredients: 
Box of brownie mix...
(any will do I used Duncan Hines Chewy Fudge)  
or you can make your own brownies from scratch 
...UP to you :) 
A package of Oreos 
white chocolate chips or colored melts for the drizzled top
Sprinkles of any kind 

Directions: 
Preheat the oven to 350F
 spray Cupcake tins with cooking spray 

Make the box of brownies as directed on the back of the box. Dip the Oreos in the brownie batter and completely cover the Oreo then place in the sprayed cupcake tin Bake for 13-15 mins or until the brownies are cooked all the way. 

Let them Cool and then create the topping however you want 
I decorated them different on top letting me know what flavor is in each! 

I will be making these again for VALENTINES DAY for a work surprise!
(decorate with hearts and cute valentine colors... so fun! )

Sugar Free Chocolate Chip Cookies

One of the ways I try to eat healthy is by making my moms secret healthy sugar free chocolate chip cookies. I haven't been able to substitute the chocolate chips yet because we all need a little chocolate in our lives sometimes. ;) 

Sugar Free Chocolate Chip Cookies

1/2 Cup- Butter( soft) 
1/4 Cup- Oil
1 Instant sugar free vanilla pudding 
1 Cup- Splenda brown sugar 
3- Egg Whites 

^ mix all together 

Then pour in- 
1/2 t- Baking soda
1 t- Baking powder 
1 t- Vanilla

2 Cup- Almond flour
1/2 Cup- Flour
3/4 Cup- Coconut flour
^ mix all together 

Pour sugar free chocolate chips in and 1 cup of pecans (optional) 

Bake at 375* for 9-10 minutes

Virgin Pina Coladas

A fun party drink is Virgin Pina Coladas! They are very easy to make, and really delicious!

Ingredients:
1/2 cup Coco Real
1 Cup Pineapple Juice
1/2 Cup Almond Milk
2 Cups Ice 


Put all the ingredients in the Blender.

Let the blender do all the work!

Yummy!

Serve!

 Cinnamon & Sugar Popcorn


                          

     So a few weeks ago I asked my husband to make some air-pop popcorn for us so we can enjoy it during our movie night.  As we cuddled up I tasted the popcorn and I noticed it was very buttery,  I said jokingly, "Wow, how much butter did you put in here a whole cube?!"  he replied, "Uhhh yeah."  ha!  I decided then and there that I would be in charge of popcorn from now on. Then I remembered this recipe my mom had and I just had to have some so my cravings would leave me alone. 

     This popcorn is just as good as I remembered it was.  Yum Yum YUM!  It has been in the family since I was a little girl.  It's such a quick, easy, and delicious twist on regular microwave popcorn.  I had popcorn at the movies the other night and I really didn't care for it, I was just thinking of this popcorn instead.  Anyway heres how to make it, first thing first, grab some of your favorite microwave popcorn, I like using a "lightly buttered" kind and we happened to have Orville brand. 

   


While the popcorn is in the microwave grab 1/2 Cup sugar, 2 TBS brown sugar, 1/2 TBS cinnamon, and 1/4 Cup melted butter. First you will want to mix the dry ingredients in a bowl.  




Then add 2 TBS of your "cinnamon popcorn mixture" to the melted butter and mix.  Now the butter and the sugar like to separate so make sure you mix it up really well right before you poor it over your popcorn. 

                                     


I like to keep the dry mix in a little tupperware container so it's quick and easy to grab.  Maybe now I will start keeping some in my purse when I go to the movies.... not a bad idea, I'll let you know how it goes.

Cinnamon & Sugar Popcorn 

1/2 Cup Sugar
2 Tablespoons Brown Sugar
1/2 Tablespoon Cinnamon
1/4 Cup Melted Butter
1 Bag Microwave Popcorn



     Mix the sugars and cinnamon together in a small bowl, when the popcorn is popped melt the butter and add 2 Tablespoons of the sugar mixture and stir, poor over popcorn, stir some more and enjoy! 






Elise's Buttercream Frosting

ingredients

-  1/2 cup butter
-  1/2 cup butter flavored Crisco
-  3 1/2 cups confectioners (powdered) sugar
-  2 teaspoons vanilla extract
-  2 tablespoons buttermilk
-  2 tablespoons heavy cream
Instructions
Cream butter for a few minutes in a mixer with the paddle attachment on medium speed. Turn off the mixer. Increase mixer speed to medium and add vanilla extract, and milk/cream and beat for 3 minutes. Then add one the 3 1/2 cups of confectioners sugar, one cup at a time. If your frosting needs a more stiff consistency, add a little more sugar. If your frosting needs to be thinned out, add additional buttermilk 1 tablespoon at a  
time. *Sometimes I also add a sprinkle of salt to bring out the flavor more


Elise's Cream Cheese Frosting

ingredients
  
- 4 oz Cream Cheese (I use light cream cheese)
- 1/2 cup Butter
- 3 cups Powder sugar
- 1 tsp vanilla
- 1 tbs buttermilk

Beat the Cream Cheese and Butter on low in a mixing bowl. Add in the Vanilla and Buttermilk, and continue to mix on low. Once the Cream Cheese, Butter, and Vanilla is smooth add in the Powder Sugar one cup at a time. Add more or less Powder Sugar depending on the constancy you like!
